Brunch frittata
Recipe by
6 eggs
3 medium potatoes, sliced or roughly chopped
2 tbsp cheddar grated
1 tbsp parsley chopped
1 tbsp chives chopped
Ground pepper
4 rashers bacon (chopped up small)
1 onion finely sliced
1tbsp oil
Prep. Time → 10 min
Cook Time → 15 min
1. Cook the potatoes until cooked but still firm, cool and slice thickly or chop into small chunks
2. Heat oil and fry bacon
3. Add potatoes and brown
4. Add sliced onion and brown
5. Fry until bacon is crispy and all id nicely brown
6. Beat the eggs, add the parsley, chives and cheese and season
7. Add the egg mixture evenly to the potato mix, do not stir.
8. Fry until the base is firm and mostly cooked, then finish the top off under the grill.
9. Serve with ketchup mixed with Worcester sauce.
