1 x 397g tin condensed milk (light is fine)
250g rolled oats (not instant)
75g shredded or desiccated coconut
100g dried cranberries (feel free to substitute raisins, sultanas, dried apricots or indeed to mix and match)
125g mixed seeds (eg pumpkin, sunflower, sesame)

Prep. Time → 10 minutes min

Cook Time → 1 hour min

1. 1. Preheat oven to 130 degrees and oil at 23 x 33 x 4 cm baking tin.
2. Warm condensed milk over gentle heat.
3. Mix together other ingredients.
4. Add warm condensed milk to dry ingredients.
5. Use a wooden spoon to mix thoroughly.
6. Spread mixture into tin and press down with spatula or your hands to flatten surface.
7. Bake for around 1 hour.
8. Cut into bars.
9. Let cool, then put into airtight container.

2. These bars keep for ages. They are delicious when you need to grab breakfast on the go, or for a mid-morning snack attack. They are also good for lunch boxes. You can also substitute chocolate chips for the cranberries to make them more child/lunch-box friendly!

“I am a working mum with three young children. My son is always claiming to be starving while my youngest child automatically says that she doesn't like the dish - even before she has tasted a morsel! Keeping everyone happy is a challenge!”
