Bourbon chicken

Ingredients for 4 people
2 lbs boneless chicken breasts, cut into bite-size pieces
1 - 2 tbsp olive oil
1 garlic clove, crushed (I use more)
1/4 teaspoon ginger (I use more)
1/4 to 1/2 tsp crushed red pepper flakes
1/4 cup apple juice
1/3 cup light brown sugar
2 tbsp ketchup
1 tbsp apple cider vinegar
1/2 cup water
1/3 cup soy sauce

Directions

1. Heat oil in a large skillet. Add chicken pieces and cook until lightly browned. Remove chicken.
2. Mix all remaining ingredients in a bowl and then add into skillet. Bring to a boil.
3. Add chicken and reduce heat and simmer for 20 mins.
4. Serve over hot rice.
