Blue-cheese stuffed chicken with buffalo sauce

1/4 cup crumbled blue cheese
1/2 tbsp sour cream
1/2 tsp lemon juice
1/8 tsp blacke pepper
2 six oz boneless/skinless chicken breast
2 tbsp flour
1 tbsp milk
1 egg, lightly beaten
1/2 cup panko
3/4 tsp butter, divided
3 tbsps finely chopped red bell pepper
1 tsp water
1/2 tsp worcestershire sauce
1/2 tsp minced garlic
1/2 tsp hot sauce

1. Preheat oven to 350*.

2. Combine first 4 ingredients in a small bowl. Cut a horizontal slit through thickest part of each breast to form a pocket. Stuff the cheese mixture evenly into each.

3. Place the flour in a shallow dish. Combine milk and egg in a shallow dish, stirring well with a whisk. Place panko in a shallow dish. Dredge each breast in flour, then egg, and then panko to coat.

4. Heat an oven proof skillet over med-high heat. Add half the butter, swirling to coat. Add the chicken and cook 4 minutes until browned. Turn chicken over; place skillet in the oven.

5. Bake for 20 minutes or until done.

6. As chicken cooks combine remaining butter, worcestershire sauce, bell pepper, garlic, and water in a small saucepan over medium heat. Bring to a simmer; cook until butter melts.

7. Remove from heat and stir in hot sauce.

8. Serve sauce with chicken.
