Black bean chicken taquitos recipe
Recipe by
1 lb boneless skinless chicken breasts, chopped in small pieces ( or ground chicken breast)
1 - 15 oz can black beans, rinsed and drained
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp dried oregano
1 tbsp chopped cilantro ( I use more)
salt and pepper
1 cup (at least) Mexican blend shredded cheese
1 pack flour tortillas
olive oil

1. 1. Preheat oven to 450. Preheat large skillet. Add salt and pepper and all other seasonings to chicken. Drizzle skillet with olive oil. Add chicken and brown. Add black beans.
2. 2. Use a potato masher to partially mash black beans and chicken together. When they are about 1/2 mashed, its done.
3. 3. Add about 1 tbsp or more black bean and chicken filling to tortilla and a little cheese.
4. 4. Roll up about the size of a fat cigar. Place on a baking sheet sprayed olive oil or use parchment paper for easy clean up. Continue rolling and place all taquitos on baking sheet. Spray the tops of the taquitos with oil.
5. 5. Bake at 450 degrees about 15 mins, or until lightly golden brown and crispy.
6. 6. Serve with guacamole, salsa, sour cream etc etc
