Beef and vegetable skillet
Recipe by
1 pound beef sirloin steak cut into 1 inch cubes
1 tablespoon dry sherry
1 teaspoon sugar
1 tablespoon soy sauce
2 tablespoons vegetable oil
2 tablespoons butter
2 cups small potatoes, quartered
1 cup carrots, peeled and cut into matchsticks
2 garlic cloves, crushed
Salt
Pepper
1 (8 ounce) package fresh sliced mushrooms
1 1/2 cups frozen (or fresh) cut green beans
1 (12 ounce) jar beef gravy
1 tablespoon fresh thyme finely chopped
2 tablespoons fresh parsley finely chopped
1. In a medium bowl combine the beef cubes, sherry, sugar, and soy sauce. Mix well.
In a large skillet over medium heat, add 1 tablespoon oil and butter.
2. Once hot and melted, ad potatoes and carrots and cook 10 minutes or until tender, stirring occasionally. Remove from skillet.
3. Add remaining oil, beef, and garlic to skillet. Discard marinade juices.
4. Cook for 6 minutes or until beef is no longer pink - season to taste with salt and pepper.
5. Remove beef from skillet with a slotted spoon. Add mushrooms and green beans to the skillet and cook for 3 minutes or until tender.
Return potatoes, carrots, and beef to the skillet and add gravy, thyme, and parsley. Mix well. Continue to cook for 3 to 5 minutes or until heated through.
