Banana nut bread

1/2 stick (1/4 cup) butter
1/2 cup granulated sugar
1/2 cup honey
2 eggs
1 1/2 cups mashed, very ripe bananas (3 heavy ones should do it)
1 1/2 cups all-purpose flour (sifted)
1/2 teaspoon salt
1/2 cup sliced nuts, almonds or your choice
I like to use chopped walnuts

Prep. Time → 10 min

Cook Time → 60 min

1. 1.) Cream the butter with a wooden spoon.

2. 2.) Add the sugar and honey and beat till creamy and light.

3. 3.) Add the eggs, one at a time, then thoroughly mix in the bananas.

4. 4.) Sift together the flour,soda and salt and blend thoroughly into the mixture.

5.) Finally fold in the nuts.

5. 6.) Butter 12 x 4 1/2 x 2 1/2 inch loaf tin

6. 7.) Pour in the batter.

7. 8.) Bake in a preheated 350 oven for 1 hour.

8. 9.) Cook until knife inserted in the middle comes out clean.
