Banana fritters

Batter
125ml cake flour
2ml baking powder
pinch of salt
15ml sugar
125ml milk
5ml butter, melted
1 egg, separated
Bananas
8 bananas
oil for deep-frying
to serve
10ml ground cinnamon
15ml caster sugar
scoops of ice cream or custard
chopped fruit
honey to drizzle, optional
Prep. Time → 5 min
Cook Time → 10 min
1. Batter:
Mix flour, baking powder, salt and sugar in a deep, wide mixing bowl
2. in a jug mix the milk, melted butter and egg yolk until well blended. Mix with the dry ingredients to form a smooth batter
3. In a separate bowl, whisk egg white until stiff and fold into batter
4. Bananas:
peel the bananas and cut them in half lengthways
5. heat the oil in a deep-frying pan. Using a slotted spoon dip the banana pieces in the batter until well coated and fry each for 3 minutes or until golden.
6. to serve:
Mix the cinnamon and caster sugar and roll the banana fritters in the mixture. Serve with ice cream or custard. Top with fruit and drizzle with honey.
