2 lbs chicken parts
2 tbs. salad oil
1 can chicken broth
1 can tomatoes, cut up
1/2 cup chopped onions
1/3 c. water
2 med. cloves garlic, minced
1 tsp salt
1/4 tsp saffron or turmeric
1/8 tsp pepper
1 bay leaf
1 pakg frozen peas
1 c. regular rice, uncooked
1/4 c. sliced stuffred or ripe olives

Prep. Time → 20 min

Cook Time → 45 min

1. In skillet, brown chicken in oil, pour off fat. add broth, tomatoes, water, onion, garlic, salt, saffron, pepper and bay leaf. Cover and cook over low heat 15 min.
add remaining ingredients. Cover, cook 30 min more or until chicken and rice are tender, stir occasionally.
Remove bay leaf.
