Alton brown's baked macaroni and cheese
Recipe by
1/2 lbs elbow macaroni
3 T Butter
3 T Flour
1 T Powdered Mustard
2 1/2 C Milk
1/2 C Chopped Yellow Onion
1 Bay Leaf
1/2 t Paprika
1 Egg
12 oz Sharp Cheddar Cheese
1 t Kosher Salt
Pepper to taste
Prep. Time → 20 min
Cook Time → 30 min
1. Cook elbow macaroni to Al Dente.
2. Melt butter in saute pan.
3. Whisk in flour and powdered mustard and simmer 5 minutes.
4. Add milk, onion, bay leaf and paprika and simmer 10 minutes.
5. Remove bay leaf and temper in egg.
6. Stir in 8 - 10 oz of the cheese and season with salt and pepper.
7. Fold in macaroni and bake at 350 degrees for 25 minutes.
8. Top with french fried onions or panko breadcrumbs and remaining cheese and bake another 5 minutes.
