Almond flour craisin scones
Recipe by4 large eggs, beaten til frothy
2 cup almond flour
1tsp xantham gum
2/3 cup bulk sugar substitute
3 tsp. baking powder
3 tsp. vanilla extract
1 cup dried fruit
1 cup nuts
Prep. Time → 15 min
Cook Time → 30 min
1. Preheat oven to 375 degrees F
2. Line a baking pan with parchmetn paper
3. In a large bowl, combine all the ingredients except craisins and mix until forms a batter
4. Add fruit and nuts and mix to distribute
5. Use a tablespoon to drop 6 evenly spaced scones onto the baking sheet (About 2 heaping Tbs each)
6. Bake for 15 minutes or until the tops are golden brown
7. Cool for about 10 minutes on parchment paper
8. Serve warm
